Mackerel with Citrus Dressing
Mackerel with Citrus Dressing
   Serves Serves 4
   Cooks in Cooks in 15 minutes


Ingredients:
8 x mackerel fillets Dressing:
4 tablespoons orange juice
2 tablespoons lemon juice
2 tablespoons lime juice
4 tablespoons olive oil

Method

  • Pre-heat grill
  • Grill fish skin side up under a medium heat for 5-7 minutes, or until cooked through
  • Whisk all the juices and the olive oil together
  • Place the mackerel on a plate and drizzle with citrus dressing

To Serve
Serve with grilled peppers and potatoes or salad.

Cook’s notes 

  • Spread a teaspoon of whole grain mustard or curry paste on the flesh side of the mackerel fillet, and cook as before.
  • Some fillets of mackerel may be thicker than others, the thicker the piece of fish the longer it’ll take to cook. If you want you can turn it once during cooking time.
  • You can also use herring fillets in this recipe.

Added bonus
Mackerel is an oil-rich fish that is naturally low in saturated fat, full of vitamins and minerals, and an excellent source of essential omega 3 fats. The body cannot make these omega 3 fats. So to ensure your body gets a regular supply, eat oil-rich fish, like mackerel, salmon or trout, once a week.
